Task: Shoot and kill 5 flying birds
Tip: Easy enough. Just be on the lookout for birds when your heading somewhere and blast them out of the sky if you see one.

Task: Shoot and kill 5 rabbits
Tip: Again, be on the lookout for'em when your heading somewhere and blast them if you see them. Commonly around ranches.

Task: Kill 5 Coyotes without taking damage
Tip: Stay on your horse and just hunt down the coyotes. They can be found all over, especially in New Austin.

Task: Kill 5 flying birds from a moving train
Tip: Again, very simple. Just stand on the train as it goes and if you spot a bird, blast it. Use Deadeye if you're having trouble.

Task: Kill any 2 types of animals in a single Deadeye
Tip: Easily done with week animals like rabbits, birds etc. Just make sure they're close enough together so your Deadeye gets'em both.

Task: Shoot the hats off two people's heads
Tip: Very easy. If you're using a shotgun, chances are you'll get this without even trying. Otherwise, just aim for their head or use Deadeye if you're having trouble.

Task: Kill 3 bears with a single shot
Tip: A lot easier than it sounds. Get a high-powered weapon like a shotgun or the buffalo rifle should you have it, go in Deadeye and get the bear right between the eyes. If using a shotgun, wait till their just in attacking range with Deadye and blast them between the eyes.

Task: Shoot two people's hats off and disarm two people
Tip: Simple, aim for the hat and weapon/hand. Use Deadeye if you're having trouble.

Task: Kill any 6 wild animals without reloading or changing weapons
Tip: A little more difficult but still rather simple. Make sure you have a decently powerful weapon with high magazine capacity (or use Deadeye, automatically refills your weapon and doesn't void your progress) like Evan's Repeater or the Mauser Pistol. Hunt down some weak animals and blast them. Use Deadeye to be safe. Also, make sure your weapon does not get holstered, as this reloads it and resets your progress.

Task: Disarm 6 people without reloading or changing weapons
Tip: Same as above, just do it in a gang hideout like Fort Mercer.
